The three most popular caviars on the market
THE BELUGA
It is the largest fish among caviar suppliers and is the only predator. Extremely rare, because you can't get enough of them. Extraordinarily strong and ferocious, with a large mouth, it migrates continuously following its prey, the herds of leucisks. It can reach a length of four meters or more and a weight exceeding 1000 kg. Normally specimens weighing 40 to 300 kg are caught, from which about 15% of caviar is obtained. Beluga caviar, light gray to dark gray in color, is highly esteemed thanks to its refined taste, its large grains and its tender skin.
THE ASETRA
It is the average among the three: omnivorous like the other species, it is a proboscid goby with an appendage that can be extracted under the medium pointed nose, suitable for sucking up any plant and small animals. Up to two meters long, it can weigh up to 200 kg. On average it measures 1-2 m and weighs between 20 and 80 kg. Asetra caviar, dark gray to golden (Imperial), should never be missing: the taste similar to walnut just in this caviar, it makes it an exquisite specialty.
THE SEVRUGA
Slender and small, with a pointed nose slightly bent upwards, it presents laterally the more pronounced diamond-shaped bone shields. With a maximum length of 1.5 m it does not exceed 25 kg in weight. Sevruga caviar is dark gray in color, has small grains and is sought after thanks to its very fine aroma.
